Time to Cook: 30 minutes
You need the following for 4 persons:
500 gram of cod fillet
150 grams of mushrooms
Potatoes for 4 persons
1, Preheat the oven to 125 C
2, Salt the cod and leave for 15 minutes while you prepare the rest.
3, Peel the potatoes. Let them boil until done. Salt the water a little bit.
4, Fry the cod on each side quickly in some butter, and then bake in the oven for about 15 minutes. The fish should be 50-52 C in the middle when it’s done.
5, Slice the mushroom and the bacon and let them fry for a while. You don’t need to add butter or oil as the bacon contains fat.
6, Add some red vinegar into the fried bacon / mushroom mix.
7, When the potatoes are done, remove the water. Add some butter and milk to the potatoes, and then you use an electric beater until smooth and creamy.
8, Add everything to the plates and serve with some truffle aioli and some parsley and pepper on top. I used a ready made truffle aioli from Eriks såser.
