Delicious as it is, or as a side with some chicken or meat.
500 gram small beetroots
150 gram Feta cheese
1, Preheat the oven to 200 C.
2, Peel and cut the beetroot into small pieces.
3, Mix the diced beetroot with some olive oil and then put them on a baking sheet and leave them in the oven for 35 minutes or until tender. Stir twice.
4, Mix the feta with some olive oil and rosemary. Put on top of the beetroot and bake for 5 minutes.
5, Remove from oven and sprinkle pine nuts on top.
Eat as a main dish or as a side.
