A very nice fish dish that is easy to make. The tarragon gives it a really nice flavour.
Ingredients 4 persons:
800 gram potatoes
2 stalks of fresh tarragon
500 gram hake
400 gram green beans
2 dl Crème fraîche (sour cream)
40 gram butter
1, Boil two saucepans with water.
2, Peel the potatoes, cut them in 4 pieces and let them boil for about 20 minutes.
3, Cut off the ends of the beans.
4, Chop the tarragon leaf.
5, Pat the hake clean with a paper towel. Season with salt and pepper on both sides. Heat up some oil on medium heat. Fry the fish with the skin side down for about 4-5 minutes. And then fry it on the other side for about 2-3 minutes. When done, put it in some aluminium foil to keep it warm.
6, Cook the beans for about 4-5 minutes.
7, Time to make the tarragon sauce. Heat up the frying pan again at medium heat, and then add the Crème fraîche and whisk it thoroughly. Add tarragon after your taste, salt and pepper.
8, Pour out the water from the potatoes. And mash them with a fork. Mix with some butter, salt and pepper.
9, And then serve at a plate.
