Perfect to bake some apple muffins during the autumn when there seem to be apples everywhere. My muffins are super delicious, and they work perfectly to freeze. INGREDIENTS
This recipe makes about 9 muffins.
150 gram butter
1,5 dl sugar
3 dl wheat flour
1/2 dl milk
1 teaspoon vanilla powder
1 teaspoon baking powder
120 gram almond paste (similar to marzipan but with more almonds in it. You can use marzipan if you don’t find any. Or just make your own. Look further down after this recipe)
1 dl grated apple
1,Preheat the oven to 200 C (392 F)
2, Mix sugar and butter until it is white and fluffy.
3, Add the egg and milk. Mix.
4, Pour in the flour, baking powder and vanilla sugar. Mix.
5, Grate the almond paste and mix with the batter.
6, Pour in to cupcake liners. Fill only 2/3 of the liner.
7, Grate the apple, and push down into the middle of the muffin.
8, Bake for about 15 minutes.
RECIPE FOR ALMOND PASTE
200 gram (1,5 cups) Blanched almonds
200 gram (1 3/4 cups) icing sugar (confectioners)
1 egg white
INSTRUCTIONS ALMOND PASTE
1, Mix the almonds in a food processor until they are finely mixed.
2, Add the egg white and icing sugar and mix until it is like a paste.
You can keep the almond paste in the fridge for 3 days. If you did to much. Shape into little balls, dip them in chocolate, and enjoy!
