Halloumi and red lentils recipe

Some of the ingredients

INGREDIENTS 4 persons

  • 400 gram Halloumi or Akkawi, I used one of each
  • 400 gram crushed tomatoes (1,6 cup)
  • 1 yellow onion
  • Some nice oil for cooking, I used a mix of Olive and Rapeseed oil
  • 400 gram Red lentils, either you buy them already cooked or just cook them before. (1,6 cup)
  • 1,5 dl cream for cooking
  • 1 tablespoon Dijon mustard
  • 1 garlic clove
  • 1 tablespoon tomato puree
  • 1 teaspoon Paprika spice
  • 1 teaspoon dried Oregano

INSTRCUCTIONS

  1. If you will cook your Red lentils on your own, put them on.And the same with the rice.
  2. Slice each halloumi into little bite size bites. Each halloumi makes about 12 bites.
  3. Fry the halloumi in some oil on medium heat until is has some colour on each side. Put aside.
  4. Slice the onion, and fry it on medium het until a bit soft. Not brown!
  5. Add the tomato puree, crushed tomatoes, cream, pressed garlic and mustard. Stir and then add the red lentils. Stir again!
  6. Add the dried oregano, Paprika spice, salt and pepper. Stir and let it simmer for a few minutes. Taste, and see if you want too add some more salt and pepper.
