Cup Cakes

My little niece just turned 6 and I couldn’t make it to her party. So when she came to visit me I arranged for us to celebrate her with a cup cake party.

The cakes was prepared the day before.

And the frosting in the morning.

INGREDIENTS VANILLA CUPCAKES

100 gram butter

2 egg

2 dl caster sugar

3 dl wheat flour

2 teaspoons baking powder

2 teaspoons vanilla powder

1 dl fat milk

INSTRUCTIONS:

1, Preheat the oven to 200C. Line a cupcake pan with cupcake liners. Set aside.

2, Melt the butter and set aside.

3, Whisk 2 eggs and 2 dl caster sugar.

4, Mix 3 dl wheat flour, 2 teaspoons baking powder and 2 teaspoons vanilla powder in another bowl.

5, Pour 1 dl milk into the melted butter and mix it with the egg and sugar mix.

6, Use a spatula to mix it all slowly and little by little all together until combined. Don’t mix it to long as the cake get less fluffy if you do so.

7, Scope the batter into the cupcake liners, filling them a little over half way full.

8, Bake in the middle of the oven for 12-15 minutes.

9, Take out and let them cool for some minutes. And then remove all of the cupcakes to a wire rack to cool completely.

TO MAKE THE FROSTING:

INGREDIENTS:

250 gram confectioners sugar

80 gram soft butter (you need to keep it out of the fridge for an hour before)

2 teaspoons vanilla sugar

0,25 dl full fat milk

INSTRUCTIONS:

1, Add 250 grams of confectioners sugar with SOFT butter and vanilla sugar into a big bowl.

2, Mix on low until it is all mixed together. If the butter isn’t soft then the confectioners sugar will get all over the kitchen!

3, Add the milk, little by little while whisking on low.

3, And then mix it all on high speed for some minutes until the frosting is smooth and well combined. You need to whisk for about 5 minutes to get it nice and fluffy.

4, If you want to add colouring then you can do that before you add it to a frosting piping bag. Or if you only want to use one colour then you can add the colouring at the same time as the milk.

So either you decorate the cupcakes immediately, or add the cupcakes in an airtight container until you want to use them. And keep the frosting in the fridge.

I did a double batch for our cup cake party.
