Punk Royale

En av de mest annorlunda restaurangerna du kan hitta i Stockholm ligger på Folkungagatan på Söder. Du hittar även Punk Royale i Köpenhamn och Oslo. Så namnet kan ge dig en ledtråd om vad du kan förvänta dig, en rebellisk restaurang med en massa galna serveringar. Jag fick till exempel ta på mig några blå latexhandskar, och fick serverat kaviar att äta direkt ur handen. Smakade det bättre, nej för det är ju alltid gott men detta var dock lite roligare.. Men jag älskar att äta med händerna, efter att ha bott i Grekland och Kina är jag ganska van vid att inte äta med lite bestick. Så det är mat, och det som skiljer Punk Royale mot andra restauranger är hur allt serveras och inredningen. Punk Royale är lite som en restaurang på speed, eller som att man släppt ut ett gäng barn i köket för att samarbeta med kockarna. Eftersom barn inte har dessa hinder med rätt eller fel på hur man ska kombinera smaker så blir det många spännande smakkombinationer, förstår ni liknelsen? Och när du slutar tänka så mycket på hur alla andra serverar maten, då får du ofta några ganska bra nya sätt att tillaga maten på. Så om du vill ha en galet rolig kväll, det här är stället!

Ohana J’s in Cocoa Beach

Real american feast at Ohana J’s in Cocoa Beach, Florida. The place has good service, is clean and are serving good sized portions of American food. The Quesadillas are really good!! I can totally recommend this place if you are up for this type of food. The only downer was their cocktails. They were not nice.

Christmas at Operakällaren

Operakällaren is a very nice old classic restaurant that first opened up in 1787 in the basement of the old Opera house in Stockholm. Since then it has been torn down and a new house was built in the beginning of 19th century. It has always been a top restaurant , and yesterday I was invited to a Christmas lunch there with Huawei.

Baking ginger bread

It’s a must every Christmas! This is a simple recipe for a homemade gingerbread dough. It only takes 10 minutes to make it!


About 200 small gingerbread figures

4 dl caster sugar

2 dl light syrup

2 dl of water

250 g butter

2 tablespoons of cinnamon

1 tablespoon of milled cardamom

1 tablespoon of milled cloves

1 tablespoon of milled gingerpowder

1 tablespoon bicarbonate

15 dl of wheat flour

How to make icing:

4 dl icing sugar

1 egg white

2 tablespoons vinegar, or squeezed lemon

Add coloring if you want!

1, Pour sugar, syrup and water into a saucepan. Boil it all and then remove it from the heat.

2, Divide the butter and put it in a bowl together with the spices. Pour the hot sugar mixture and stir until the butter melts. Allow to cool to room temperature.

3, Mix flour with bicarbonate and stir it into the batter, which becomes quite loose (it swells). Work the dough with a wood or plastic fork. Leave the dough in the fridge, covered or put in a plastic bag, 1-2 days before baking it out.

4, Bake the gingerbread cookies: Set the oven to 200 C. Use a little bit at a time – it’s always easiest. Powder the baking table with some flour and the rolling pin. Cut out the gingerbread figures with a gingerbread cutter and place on a baking tray with some baking paper at it.

5, Put the baking tray into the oven at 200 C, and bake the gingerbread for 4-6 minutes. Be careful – gingerbread burns easily!!!

Add icing if you like!

Enjoy!

Make sure the gingerbread dough is cold when you start to roll it, then it’s much easier to make gingerbread cookies. And the thinner you roll the gingerbread cookies, the crispier they get!

Soulfood Sthlm

Is run by Fanny who is making all this absolutely fab food. And on the plus side it is all healthy! Gosh how perfect.

Yesterday Alexander had an event at Marbodal kitchen in Stockholm and Fanny had made all the food.

We had different puddings, soup, rice etc..

This cilantro sauce was so good! And I’m not even a big cilantro fan! How weird is that!?!

Having dinner in the Swedish archipelago

Neil Sharp from Innis & Gunn, (one of the guys behind one of Scotland’s most successful international craft brewers) came to Sweden with a wish for going out on a rib. So that is what happened, we started off with some nice beer at No 53 in Gamla Stan.

Yesterday I had the pleasure of looking and cheering at the team during the hot kitchen part of the competition. I went there with Cederroth Firsth Aid Sweden. And we were a big group of supporters. No other team had as many. I hope it helped them;) At least they reached gold level yesterday!!

Moderna museets restaurang

Yesterday I was invited with some others to cook with Malin Söderström, the head chef at The Modern Museum in Stockholm. We got to make the same salad that will be served at Sthlm Food & Wine the 9 – 11 th of November. There will be a Chef’s Restaurant with different famous Swedish chefs cooking. So there will be some pretty amazing food during the fair!

Trying out some Sandeman port wine

I went for a lunch at Gondolen in Stockholm to try out some porto from Sandeman. And it was so interesting to have it matched with food. And their white port paired perfectly with the starters.

The Sandeman Fine White Port was a perfect match with the duck terrine, and the port wine tasted a bit of honey.

Torvehallerne

There is a market in Copenhagen that is not like other markets. It’s a bit better, cosier, more luxurious.. Well, I like it. Except the thing that you shouldn’t aim for having lunch there in the weekends. Because it’s packed!

It doesn’t look much from the outside, but there are two buildings and there is a flower market in between them!

The Silo

The Silo is a former grain silo located just by Nordhavn’s waterfront in Copenhagen. And lucky me, my friends live there. So after dinner we just went up there to have some cocktails. And they didn’t disappoint us! But next time I’ve gotta eat there. I know that they have some great chefs there. Both Denny Vangsted and Morten Falk. So the food should hopefully be good.
